how to make greek salad

I have had a lovely day punctuated by utterly shit news: no internet for another two weeks at least. This is starting to impact my life a bit too much.

Happily, today the weather was amazing. We had a proper summer day and so i decided to make greek salad. Here is how I made it, so you can have the real thing at home too if you like.

For two hungry people as a main meal or for 4 as a starter.

What you’ll need:

  • 2 cucumbers
  • 8 victoria tomatoes on the vine. Sainsbury’s taste the difference are worth it.
  • pot of kalamata olives from waitrose, the little fresh pot with light seasoning/li>
  • 1 pack of feta cheese. Make sure it says “feta”, as that is of protected origin and really does make for better cheese.
  • oregano
  • extra virgin olive oil

How to assemble the salad for best flavour. Do all of the below with just one knife over the big salad bowl you will serve the salad in. No need for chopping boards or anything like that.

  1. take one cucumber, slice it down its length, and cut it up into thick (5-10mm) half moon slices
  2. cut tomatoes into orange slices, pulling out as much of the gooey seeds as you can and leaving only the flesh
  3. toss in about half the pack of olives
  4. slice a green pepper (this can be done by following a spiral pattern from the tail of the pepper) to create little “m” shapes for the salad
  5. cut the feta into cubes of 1-2cm each side
  6. pour a good soupspoonful of oregano into your palm, and crushing it with your other palm, sprinkle it on top of the feta and salad
  7. pour a generous, but not overwhelming, amount of olive oil on top of the feta and oregano
  8. let the salad sit for 5min before serving

    I plan to make this for dinner tonight but was wondering how you cut a tomato into orange slices? Is there some sort of fruit / veg alchemy going on?

    1. Hmm… not the best description… I suppose “half-moons” would have worked better, but as they are shaped like the pieces that come out of an orange (and not like a moon cut in half…). I’ll take suggestions :)
